I'm a huge fan of mint. I love chocolate mints, mint ice cream, mint candy, thin mint cookies, oreo mint cookies, and mint tea. Mint is a flavor that refreshes and calms at the same time. I've tried at least five or six different herbal mint hot teas, and found one that is my hands-down favorite. Then it dawned on me to make it into iced tea. What could go better together than mint and a cold glass of iced tea in the summer?!
Here is my recipe for a delicious cup of cool summer mint iced tea! It makes a full gallon, because you don't want to make this by the glass. It's way too good and it will be gone all too soon, leaving you craving more! I purchase the tea by the six-pack on Amazon. One box makes one gallon, and costs $2.33 per gallon if you use Amazon subscribe and save.
INGREDIENTS
1 box (20 bags) Celestial Seasonings Herbal Mint Magic Tea
1 gallon water
1/2 cup honey
DIRECTIONS
Boil some of the water (approximately a quart, but don't waste your time measuring it). Grab a large pitcher and dump the entire box of tea bags into it. Measure one quart of boiled water, and pour it over the tea bags. Let it steep five to ten minutes. Remove tea bags. Add honey and stir until dissolved. Add three more quarts of cold (or room temperature) water. Chill overnight. Serve over ice, and garnish with fresh mint leaves if desired.
Usually you use one tea bag for eight ounces of water, which means you would only use sixteen bags to make a gallon of tea. I like things really minty though, so I use the entire box, which is four extra tea bags. You could of course sweeten with your sweetener of choice, but I believe in real sugar and real honey. And I think honey tastes best with herbal hot tea, and also prefer it with this iced tea, rather than sugar.
